If you could start any business, what would it be?

OK, here's a shot at two easy points: If you could start any business, what would it be? It could be any business idea. Let those creative juices flow. I am starting a logging company based out North Florida. What would your ideal business be?

I would like to Someday open a Selective hours Restaurant something small and quite with a phenomenal Wine selection and of course great food, just something I would do on the weekends I don't think I would like a full time Restaurant besides if people Can only come there on weekends it would build kind of a alluring quality, Well at least that's how I picture it.
