Here's some suggestions beyond the obvious choices:

If you get death in the family then you should also get a lonely place for dying as it introduces Tim Drake and is a good read. The TPB is out of print but it is easy to find or you can get the comics (see link below). Another great read but older is 10 Nights of the Beast.

If you are looking for early batman stories get anything from Legends of the Dark Knight before #70. I read Venom, Prey, Collected Legends of the Dark Knight and Dark Legends (all of which are out of print) but you can find the comics very cheap. All the stories were great and it was nice to see Batman in his earlier years. Note: I have not read Shaman or Gothic so I don't know if they are good.

For the big epic story lines (Knightfall, No man's land, Bruce Wayne Murderer and War drums/games/crimes) - Out of all of them I still love Knightfall. Knightfall 1 and KnightEnd are the best - Knightfall 2 is OK. No Man's Land is also a good read with Officer Down being an essential follow-up. Bruce Wayne Murderer/Fugitive...Nothing good to say but I would not waste my money on this. War stuff avoid like the plague it is a misjustice to the entire bat family.

The 'Killing Joke' and 'Batman: Arkham Asylum' are two essentials.
Alan Moore's "Batman the Killing Joke".

A story I really liked that ran in all the Batman titles around 1998 was "No Man's Land". Gotham turns into a state of anarchy after a major earthquake.
The Killing Joke
Gotham Gaslight
Arkham Assylum
the Dracula trilogy (Red Rain, Bloodstorm, and Crimson Mist)
The Long Halloween is good. It was one of the inspirations for the Batman Begins movie. It also has a sequel called Batman: Dark Victory that you might want to check out.
One of my personal favorites is Batman: Tales of the Demon.

1970's stories that shaped Ra's al Ghul and Batman's relationship
