How about Elemental Gelade? I've only read the manga so far and I love it, but the anime should be okay too. It's about girls who are weapons and the main girl is a special weapon who is trying to get to a place, but she's being hunted, so her friends have to get her there safely.
Chrno Crusade is also a good one, it's kind of serious and sad. It's about a nun who's looking for her lost brother with the help of a demon.
