Nope, cause they'd be EVIL castles, and when you're not looking, they'd sneak up behind you and stab you in the spleen with a turret, or something like that.
Plus, his sand control has limits. If he lost concentration, was knocked out, or just went too far away, the castle would collapse. A really good regular sand sculptor mixes glue with the sand and can make a piece last for days or weeks.

hell yeah! he could build sand castles the size of a house and sell them to the people of the sand village. then he could have a side job as a Realtor when he's not too busy with kasakage duties. not to mention all the tourists it would attract (i can just imagine gaara building them and temari standing there counting the money. lol)

YES! and he could make the best sandcastle in record time! if i had to guess he'd probably make it in less than 2.4 seconds. (sorry, completly random number) Also, he could make one that's the size, and looks like a real castke! just think, if he were to actually fall in love with someone (Ahem, he'd love me!) than he could make them a wonderful sandcastle to live in, complete with a sand canopy bed, a sand flat screen TV (to watch sand football), and much more! It would be a sandy wonderland! Also, he'd win every single sand caslte building compitition. He's just that good XD I'd love to have gaara build me my very own sand castle! I'd live in it forever and ever and ever, and he'd be my prince charming! (wow, just imagining that is scaring me. just the fact i thought of gaara loving someone is freaky o.0)
