I was going to suggest Naruto, but I guess not o.o;
There's always BLEACH, Fruits Basket, Kamichama Karin (though I'm not entirely sure it's an anime, my friends tell me it's an EXCELLENT manga), and Blood+ are some good ones. As well as Death Note, InuYasha, Ouran, and Trinity Blood, though the latter is just a tad religion-based.
Excel Saga or Puni Puni Poemi are both really colourful and moderately funny.
Death Note. Its genious and has a great plot. Bleach too. Bleach is also awesome.
