Firstly, well spotted, that is some good thinking! Superman is Kryptonian not Jewish, however, he was created by Jerry Siegel and Joe Shuster who were Jewish. They created him as a kind of hero for the underdogs at the time. He originally fought against corrupt landlords and wife beating husbands.
The Jews, at the time of his creation, were very much downtrodden and Jerry and Joe created him as a wish fulfillment fantasy - how they themselves would like the power to fight against the people who were abusing them, their people and anyone else who was abused by corrupt authority figures.
By the way - they were payed just $200 for the first Superman strip and DC comics owned the license. While DC comics made millions from the Superman character from movies, merchandise etc. Jerry Siegal and Joe Schuster lived in relative poverty, never to receive the money they so rightly deserved for the character they created. Superman would not approve!!

No. Other than Siegal and Shuster being Jewish there has never been any other reference to Superman himself being. If anything he is some form of Christian since they've put out numerous holiday issues with him delivering Christmas presents to needy children and caroling and what not.
