Legend of the Overfiend
Paranoia Agent, Rozen maiden, monster (jp only), Siral, When they cry, Elfin Lied, Genshiken, Case Closed.
Go for Ergo Proxy. Definitely a great anime if you want something that delves into the human psyche.
I'd say ....
Higurashi no Naku Koro Ni (or When they cry) - as long as you don't mind a bit of bloody violence and murder. And a lot of insanity.
Utakata - as long as you don't mind high school girls dressing up in wierd outfits and flying around... no, it's not as bad as that. ^^
Rozen Maiden - i really liked this series, it has great songs and pretty good characters. Just watch it, okay?
Definitely Monster. Once it really gets going, it's easily one of the most thought-provoking anime out there. It's just an absolutely incredible series.
Paranoia Agent would be good for a start, and if you like to view life from an other-worldly perception, Jigoku Shoujo might appeal to you.
Death Note is very well done but I could give many examples which have already been mentioned and there is usually a new one with every season in Japan (check out Higurashi no Naku Koro ni Kai, a real conversation starter!! will be huge when licensed)
