Perfect Blue, Millenium Actress, Paranoia Agent, and Memories are the only ones that come to mind right now.
Perfect Blue - pop idol turned actress starts to have a mental break down because of stalkers/ threating letters/ and several disturbing hallucinations.
Millenium Actress - another actress describes her life as though every film she's ever done was real
Paranoia Agent - animation creater feels scrunched in pursuit of new characters for show gets assaulted by kid on skates with a base ball bat, soon others are being assaulted as well... only there might not be a kid running around doing it at all!
Memories - three stories. 1st story about some guys trying to save whoever sent a distress signal from a ruined ship only to need rescueing themselves. 2nd story about a guy who accidentally takes the wrong medication and doesn't realise it and becomes a biohazard to everything around him. 3rd story about a country obsessed with fighting a country that didn't exist as far as I could see.
