subbed videos/episodes are in japanese, or whatever the origin of the show, but have captions on the bottom in english. dubbed is when they rerecord the episode in english.
subbed and dubbed means that there are words on the bottom of the screen. example: if naruto episode in japenese, you can read the english subs on the bottom so you understand...most episodes are like that. Sometimes there are spanish subs too.

Subtitles explain what the people are saying, so you have to read them to understand instead of listening to the Japanese. Dubbed episodes is where again a Japanese clip is playing, except the people edit out the Japanese voices and replace them with English actors' voices so you don't have to read subtitles.
