I've seen a lot, but these are my favorites.
Mushishi -
Since* you've seen the Ghibli films, I think you would really appreciate this.
Mushishi is an absolute masterpeice. It's a fantasy/drama unlike any you'll ever find, and it's my favorite anime.
Each episode tells a different story. I thought I would be bothered by this, but I wasn't. This adaptation is very faithful to the source material.
Mushishi evokes many different emotions while viewing it. Some episodes may have a really nice ending, while others can be really sad. The beautiful background music amplifies these effects.
The music is very serene. Listening to the OST, something I do everyday, is the best way to relieve stress. It really works wonders for the anime, especially when considering the quality of animation maintained throughout all 26 episodes.
I have yet to see an anime series animated as beautifully as Mushishi is. Everything was so well done, you can tell they spent a lot of time translating this from the manga. The Mushi are reminiscent of the creatures you would find in a Hayao Miyazaki film, the Kodoma of Princess Mononoke perhaps. They have a certain magical aura, a mystifying presence, that makes you want to see more and more of them.
I suggest you buy the DVDs, which come in a very nice package with lots of extras. This is an anime which should be seen by anyone who enjoys anime.

if it was a more popular one i would say either bleach or naruto for obvious reasons but if i had to pick a less popular one i would say either black cat or chrno crusade because they are full of suspence and action...

I love Naruto because all the action and plot throughout the aime/manga. I also love all the characters and its cool to see there attacks and there development. I also like ow there are different type of attacks and jutsu's and there are new attacks and jutsu that keep coming out,which makes the story really interesting and really easy to get into.

Dragon Knights (manga) by Mineko Ohkami.
It has beautiful artwork, wonderful story/plot, and very deep characters! It's 26 volumes long, and I don't want it to end because it's that good!

Anime wise, I love, love, love Chrono Crusade. It's fun and serious and has really likeable characters. The plot is also very good and not cliche at all.
One Piece and Death Note(anime)
I like the story and characters, in both anime!
My favorite manga is the Saiyuki series (Saiyuki, Reload, Gaiden). Kazuya Minekura is a genius. Her artistic talents out surpasses any mangaka out there. She is very detailed oriented in her artwork and can tell a story without it being so corny or complicated. Her other manga works like Wild Adapter and Bus Gamer are equally brilliant!
