1) Full Metal Panic! (including FMP! The Second Raid) = I don't believe you haven't encountered this series yet since it's so popular, but if not you should give this first priority.
2) Eureka Seven = Mechas surfing on air. One of the best mecha series out there. Great character development, best story.
3) Code Geass ~Hangyaku no Lelouch~ = it's a series by Sunrise but character designs are made by CLAMP. It's a great series. The 2nd season's coming this Spring season.
4) Gurren Lagann = every male otaku I know loved this series for reasons I've yet to discern, so maybe you'll like this one too.
5) Evangelion = of course who doesn't recognize this?
6) Dragonaut The Resonance = not exactly mecha but mecha dragons who can turn into human.
7) Vision of Escaflowne = mecha's who like to draw blood for their pilots. It's a romantic story though.
