I suppose you've read the Joss Whedon ones? Astonishing X-Men. This goes back to the traditional superhero/spandex era, not all this new black leather stuff. The artwork is brilliant and the characterisation is very good too. Also, the 'New X-Men' comics are good, but very stylised. And for the more gruesome fan, the Marvel Zombies series is very well drawn, but doesn't just focus on the X-Men.
