My personal favorites are Motteke! Sera Fuku from Lucky Star; Hero's Comeback from Naruto Shippuden (first ending); the theme from Miko Miko Nurse; and whatever the first opening and ending for Powerpuff Girls Z (all can be found on anime6.org, except Miko Miko nurse, cahch can be found on youtube ^^)

The ending to the melancholy of haruhi suzumiya was pretty good, actually most people know it.
Currently both the opening and closing themes of death note (2nd season). I have them both on my iPod ^_^....

hitman reborn opening 3( awesome best opening so far)
and ending 4 (especially the ep 63 version ; the characters' voice actors sing this version)
chobits opening- never tired of it ( pure and stimulating at the same time)
bleach opening 1- thought it was original - it caught my attention while I was looking for the next anime to get hooked on
eyeshield 21 opening 2 (Innocence) also the ending song for the last episode -really meaningful in relation to the story
