He wanted people to see that these deaths were not a coincidence. If some died from cancer, others from gunshots, and a few from heart attacks- then it becomes harder to attribute these all to one person. So, Light made it uniform. If someone randomly died of a heart attack- and they were a criminal, you could be sure that Kira, god of the new world, had passed judgement.
edit: soccersarah hit the nail on the head when saying why it was specifically a heart attack, instead of anything else. It was the default choice.
Also, I forgot to mention that Light wanted to keep the fact that he could kill people in other ways a secret. This came quite in handy when he was dealing with Ray Penbar and his wife.
Light killed people because he thought he was "chosen" to rid the world of evil people. The reason they died of heart attacks is because he didn't spesify how the people died (if u don't write how they die they die of heart attacks). He probably did that so he could write as many names as possible (just a theary).

I think there's a bit more to it than just wanting to stick with the default. I could see the speed aspect being what was going on initially, before "Kira" was created, because he didn't seem to care at that point whether anyone knew what he was doing, rather, he just had a goal. And it turned out to be useful once L was on the case, as using some other method would have given insight into his personality, and would likely have shown L the limits of the Deathnote's power very early on. Ultimately, I think that was the reason he stuck with them: A change would indicate something about his own personality to L.

I just wanna add that heart attack is the default choice cuz it's the number one killer in the world and if the doctors can't assign the reason for a petient's death, they would almost always say that it's caused by a heart attack. So that default cause of death is ingenius, if not for L disclosing the secret, nobody would have realised it..
