I don't understand why you said if it's less fighting because the word 'uncut' obviously means they will show a lot more fighting!. However, on the uncut version the fighting are quite the same only a bit violent (nah, not really violent), more curse word, and there are some naked scene (I don't mean like hentai) they cut it on US version!. There are scene when Goku was a kid he was butt-naked, Bulma showed his bo0bs to Muten Roshi, Bulma taking a shower and stuff like that!.!.!. Naked cartoon are quite a taboo for the American right!? Probably because at that time they think that cartoon is only for a kid age 7-10 years old!.Www@Enter-QA@Com

Yes! there is a lot of difference b/t these two!.
First of all, they take a lot of the blood that the anime originally intended and they cover up curse words on shirts or signs, and i think i remember some of the scenes being shorten up!.

DBZ Uncut keeps in more of the blood and some fight scenes that were deemed inappropriate for showing on the TV timeslot!.
As far a dialogue goes you don't miss much!. It's best to watch it in Japanese if you want good dialogue :)Www@Enter-QA@Com
