if you really wish to be as stunning as those cosplayers on youtube, your best bet is by paper mache; just like some of those volcano models in school!. real wood is too heavy and hard to make!. if you know someone who knows how to work with plaster of paris, I bet you woudn't be asking this question anymore!.

first, create a wire mesh skeleton as the structural foundation, more like making a 3D mesh of it!. (something like this but in the shape of sasori's back and main details)(http://www!.ann!.jussieu!.fr/~perronnet/mit!.!.!.

shape it like sasori's back, probably like a tortoise shell!. there must be thick foundation wires aside from the mesh to hold the shape and the weight of paper!. most likely, you need to put foundation wires for the shape, curves, and details(ie mouth edges, teeth)!.

after making the "skeleton", start putting glue-soaked paper!. newspaper is a good material because they're cheap!. cover the entire structure about a quarter inch thick of paper!. be sure that the previous layer is dry before adding another layer!. you probably need about 5-7 of quarter-inch layers for it to look decent!. the thicker, the better

going to the elevated parts; like the nose, forehead, and chin; buy some blocks of styrofoam and shape them like those parts then glue them securely to your "tortoise shell"!. to be sure, poke in some sticks or secure them with wires after gluing them!. then cover with 1-2 quarter-inch layers!.

sand them with sandpaper before painting!. you can also make structural adjustments to the details by sanding!. or ther are already detailed enough, you could just use smooth paper to cover them!. then paint!!!! just make sure it looks realistic!. paper maches could look like real wood just like this one:
