Fullmetal Alchemist--the art can be a little low at times, but the story is high and fast-paced!. It's not too long, with 51 episodes and a movie, The Conqueror of Shambala!.
Bleach--a very long-running anime, like Naruto or something!. The characters are well fleshed-out, though it takes some time to get into the main storyline and has several arcs!. Only for people in for the long haul! (Truthfully, I kind of prefer the manga!.!.!.)
Ergo Proxy--for those of you who like the darker kinds!. It's pretty good, certainly with a newer approach to anime and plotlines!.
Elfen Lied--not for the faint of heart! But it does have a good story, though is recommended for 18+
Devil May Cry--meh!. I kind of just threw this one in here!.!.!.it's good, but seems to lack much of a real storyline!. It's only thirteen episodes, I think, and has good scripts and art!.
Black Blood Brothers--very good, with a slightly generic base but an original plotline!. Who could resist the two awesome (and slightly hilarious) brothers!?
Vampire Knight--definitely shojo-based!. It doesn't have much action, though it does have some, and a very deep plot line with a lot of twists and turns!. This one's not over yet!.
Ghost in the Shell--a slightly darker one, more sci fi than fantasy!. It's a futuristic world with androids and such, like Ergo Proxy!. It has a lot of violence and is fast-paced!. It reminds me a little of The Unit!.
!.hack--There are several in this series, and each have their own plotline, but they all seem to follow the lighter path!. Some are more humorous, others more serious, but all are not for the gothic-type!.
s-CRY-ed--I love this anime! It's fast-paced at times, slower at others, and is certainly very deep!. The characters are well fleshed-out!.
Blood+--Fairly gory, and very fast-paced!. It keeps you entrenched!.
Hellsing--Stay away from the manga and the Ultimate version of the anime, but the original anime is awesome! It's a little gothic, and not for the faint of heart!. It's short, with thirteen episodes, and keeps you entrenched!. I watched this in a one-day marathon!.

As mentioned, Full Metal Alchemist is amazing!. It's has a wonderfully emotional plot line, with a nice spicing of mystery and action!.
If you like the school theme, Ouran High School Host Club might interest you!. It's about a girl who has to pay off a massive debt to a club at her rich private school after she broke the club's auction item!. In order to do so, she has to dress up like a guy and work as a 'host'!. It's a cute series, with a lot of humor!.
Air Gear might be along your alley as well!? Not sure!.
Vampire Knight is also a really good one!. It has a boarding school theme, and it's basically a plot that follows along two different classes at this school: The day class [humans] and the night class [vampires]!.
I've read a bit of it, and I'm in love!.
