Why do we categorize music, as in different genres, and not talk about Music as a whole?

The genres are not just genres but different cultures in a sense. Each has to be given its due attention, criticism and comparison. It's very hard to generalize music, since people even disagree on that definition. i.e.--a classical music lover would not consider rap or hip hop "music."
