Where can I find music like those old fashioned educational videos??
I'm trying to find some music track that sounds like those old fashioned educational videos from way back a few decades.
It's the kind where it's very 'plinky plunky' upbeat music, almost like elevator music. One example I found, is like this:

If anyone can help me find some music track that is like that sort of music (it's for a project) I'd be really grateful.

You're looking for what's typically called "production library" music. It's music that's created specifically to be used as the background beds in various productions.
Buying this for actual re-use is expensive, because you're paying for the right to reuse it commercially. If you just want to get some for personal use, there are a number of CDs that have explored various production libraries.
