There is a show on the Discovery Channel called How's Its Made, they showed how to make an acoustic guitar in one episode. It was pretty neat how they did it. You might find the episode online somewhere, but it kinda showed you how to do it.
I am making smaller electric guitars for my nephew. They are just for show, but I learned alot on what to do from that show. They don't show every step, but the steps they do show, you can pretty much fill in the blanks from there.
If you are handy, get an old acoutic and disect it. See how it all fits together and what pieces you need, and then you should be able to make one.
