You buy all ranch animals form Brownie ranch and their variety of animals is determined by how much money you have made shipping animal products!. I think once you hit 5,000 G shipped in animal products, They begin to stock horses and goat, and then at 10,000 or 15,000 (not sure) they begin to stock Ostriches and Ducks!
If you are REALLY in a hurry to get them available, Buy tons of animal products and turn around and ship them!. You'll lose money but your stats for animal products shipped will go up quicker than shipping a couple chicken eggs per day :P

First of all, you have to be able to access Brownie Ranch!. You can do this by either having a level 3 hammer and brake the stone blocking the ranch, or you can wait till Spring 28!.
Before you can buy animals, you have to make Dale make a coop or a barn!.
Then you can go to the store and buy animals!. At first you can only buy silkworms, chickens, and calves (baby cows)!. But after you ship 5,000 G worth of animal products (milk, eggs, cocoons, etc!.), you can buy foals (baby horses) and kids (baby goats)!. Then when you have a total of 10,000 G worth of animal products, you can buy lamps (baby sheep), ducks, and chicks (baby ostriches)!.
