If you are talking about chitterlings then yes they are pig intestines!. My family is from the south and I know alot of people who love to drown them in hot sauce but I personally can't stand them (they stink)!. True it's gross but you have to look back at history to even understand why people ate them at all!. During times of slavery, slaves had to make do with food they were given and it was the less desirable items (greens, chitterlings, pig feet and ears, neck bones, etc)!. They found ways to cook and season these things to not only make them palatable but in many cases pretty darn tasty!. As time passed blacks could often only afford these lesser cuts of meat so that's what they ate and it where soul food comes from!. It's funny because I'm a gourmet cook and one of the biggest foodies you'll ever meet!. I LOVE foie gras and caviar and have actually flown to places to try a restaurant, but just as you can find me at Masa eating sushi in NY or having a wine dinner at Taillevent in Paris you just as likely find me kickin it in the hood at my cousins house with a big ole plate of neck bones, yams, greens, jiffy mix, and a slice of sweet potato pie!.Www@Enter-QA@Com
