The smoke should be moving perpendicularly adjacent to the the fact that those trains run on electricity and therefore have no smoke.

You're all wrong! The first London underground trains were steam driven. It only got popular when electric trains were introduced.
The steam and smoke would have travelled at the same speed and direction as the wind on such a hypothetical train.

So artificial wind is created, and is made to go in many directions, as the master computer sees is the most beneficial. Artificial rain is also created, for the same reason.
The underground train would also have images displayed on the glass so that you get the impression that the train is above ground. Although you don't see this in the movie because the undead have damaged the circuitry that controls this feature.
So you have the train going at 300 mph SE, and the wind is travelling at 6 mph NW, and it's a rainy day.
What direction is the steam going in? Easy it's flowing directly behind the train. Real coal steam is carcinogenic, so the steam is a hologram.
Why don't they make the steam subject to simulated natural physics? The budget for that modification has gone into making the retro-virus.
