Well, it all depends on the Vitamin A content really.
Oh, and the porosity of the carrot, the ability to have all the vitaminy goodness leached out of it by your screaming eyeball.
So really, if you've got some grade-A quality carrots, you could probably stick your eyes, have the vitamin A heal the wound, and actually improve your eyesight.
