3 because even though you might end up with three of the same colour, you will sure to have at least two of the same and who in their right mind would wear mismatched socks?
The technical answer is 2 to get a pair but when it comes to socks, they have to be the same style, height, thickness AND colour or I do not consider it a pair.

You would need to take out four to make sure you had a pair because two socks equal a pair. In order to have a matching pair, you would need two of the same color. Therefore, if you take out two blacks and two whites, then you would have two pairs. And, like you said, you would need two pairs of socks to be sure you had A pair.

A pair of socks is any two, but if you want a matching pair - three would ensure you had at least two the same colour. I'm assuming they are all the same style and size!
