My guess would be to lock the robbers in? I know a place I lived at, the 7-11 there use to get robbed at least once a month!
And sometimes they use to lock the doors to keep the robbers in.. Silly people :)
As well, some petrol stations have locks on the doors to, that was because just in case of an emergency (gas leak or petrol) they would close down the place and have to lock the doors.

i think in the evening the doors are closed and locked for security and customers just use the pay at window service

Just in case the attendant is working by themselves and they have to take a bathroom break. . . . .
Even though it is open all that time, people still have to pay for what they buy. So you can't just walk in and take something jut because the place is open all year.
