Sorry I only know half of your question. (I worked there I should know it all)
The Rolling Stones named their band (in 1960) after the Muddy Waters song Rollin' Stone Blues. Rolling Stone the magazine was started in 1967 in San Francisco. But I can not find anything to support the name. There are a couple of things I heard while I worked there. It was named after a song, or the saying- a rolling stone catches no moss.....
