In POTC:At World's End, how exactly did Liz's dad die?

If he truly did stab the heart of Davy Jones, why then wasn't he the captain of the Flying Dutchman?

Oh okay, so in the boat he was just explaining what would happen if you stabbed the heart....that makes more sense! Thanks a million! That was the only part that was bugging me from the movie!

It was implied that he was killed by Lord Cutler Beckett because he was knowing too much about the heart. Norrington later on in the movie said he knew nothing of the murder when Elizabeth asks him about it. Hope this helps...
