Luke is in denial. Denial is the first stage in the Kübler-Ross model of grief.

1. Denial : The initial stage: "It can't be happening."
2. Anger : "How dare you do this to me?!" (either referring to God, oneself, or anybody perceived, rightly or wrongly, as "responsible")
3. Bargaining : "Just let me live to see my son graduate."
4. Depression : "I'm so sad, why bother with anything?"
5. Acceptance : "I know that I will be in a better place."


EDIT: I am aware of what Obi-Wan told Luke about his father being murdered by Vader in the first movie, thequeenreigns. However, Luke knew through his instinct and his expanded ability with the force that Vader was his father before their confrontation in "The Empire Strikes Back".

Remember what happened when he went into the cave on Dagobah. Luke asks "What's in there?", and Yoda responds with, "Only what you take with you." Yoda is referring to Luke's fear of his possible fate in giving in to the darkside, like his father. In the cave, he sees Vader, confronts him, decapitates him, and Luke's own face is revealed behind Vader's mask. In that moment he knows for certain, but does not choose to see or believe, that his family legacy is a dark one and Darth Vader is his father. Before leaving Dagobah, Yoda again mentions the "failure at the cave" to Luke. He is warning him to accept the truth of what was revealed to him about Vader, so that he may not suffer the same fate.

All of this is touched upon again at the end of the film. It is re-affirmed by Vader's line to Luke, "Search your feelings, you know it to be true!" On some level Luke knows, and has known for quite a while, the truth of his father's fate. His reaction of course was denial for something he knew was true, but didn't want to believe.
