as Barbossa said, any mortal who removed a piece of gold from the CHEST would be cursed. But as the other answerers have pointed out, Elizabeth didn't remove the piece of gold from the chest.

she didnt directly take it from the loot she took it from will witch his dad took it from there.
Because she didn't take it from the chest...she took it from Will (who also didn't become a skeleton because he got the medalion from his father..who was cursed)
