Tommy, Quadaphenia and The Song Remains the Same all have great soundtracks. Oh and O, Brother Where Art Thou has an amazing bluegrass soundtrack.
"Pulp Fiction" had a great soundtrack with lots of oddball little songs that just worked.
If you're talking about all soundtracks (including instrumental), then I'd say "Raiders of the Lost Ark", "Superman" and "Star Wars" should be up there as well. I mean, who DOESN'T know how those themes go?

Easy Rider had a great one! "Reservoir Dogs" has a great 70's sound to it! "Pulp Fiction" does, too! Obviously, Terrantino knows how much a sound-track can add.
I also loved the sound-track to a quirky, little known Robert Redford-directed film called "Milagro Beanfield War"
And for good ol' American swing, check out "Monster, Inc"
or a little-known Steven Spielberg film called "1941"
