The weird performance Palpatine was watching is some sort of space opera/production.
1. They were watching a Mon Calamari Water Opera. Admiral Ackbar was a Mon Calamari.
2. After the first Death Star was destroyed Vader became obsessed with finding the pilot who had fired the kill shot ... his "investigation" led him to Luke Skywalker. Vader knew a lot about Luke before Palpatine said anything about it ... at least he thought he did. It's not outside the scope of the story to think that Palpatine knew all along and was just waiting for the time to be right.
