The ghost showed him the crummy Christmases that he'd had as a child. His father bringing home meat instead of presents was meant to illustrate how Frank had developed into someone who gave no value torwards gift giving or the holiday season at all - hence his poor gift giving skills like hand towels and such. It showed the reasons why he never felt like Christmas was anything special, just a letdown, and added to him becoming a Scrooge. I believe the Taxi driver took him back to his office after their encounter.
He didn't really change him, but let him see possibilities.
