My 14 year old tells me they gave it that name during the filming stage as a working title until they decided on one that fit the movie better and they were never able to come up with anything better.

I think it was really supposed to be titled "Greyshot".
Well, they called the movie a few different things before it was called cloverfield. ( cheese, montrous, slusho)....there was so much buzz about this movie that they had to keep changing it so that no spoilers could leak. JJ abrams the director called it cloverfield after a street name near his office

Cloverfield is the name of a road in California where the producer, JJ Abrams has a studio. They couldn't think of a better name, so they just kept the code name on the final project.
My friend told me that Cloverfield was just the code name for the movie that J.J. Abrams used while making the film. It was like the name of the street in front of his office. they hadn't planned on using for the actual title of the film but it was so catchy that it stuck. The name Cloverfield was the code-name for the movie while they were making it so people wouldn't catch onto what they were doing and spoil the plot and monster. That's why even after the movie was out for a day you still didn't know what the moster was.
Anyway, the code-name caught on and gained internet popularity. So, thanks to the added interest, JJ Abrams kept the name.
It's not about the monster it's about the people trying to get to their friend and getaway from the monster. The monster was just the filler for the movie
