Just search the Goofs and Trivia sections of the movie on IMDB. Always a good place to start. You'll be surprised at how factually wrong some movies can be even with all the research filmmakers do.

As it's an American film, probably not a lot...

They are very good at ignoring facts in favour of a good story.

The main back bone of the story was that the Knights Templar's wanted to go to war with Saladin. As a result of a very poor planning they walked into the desert with no water and lost.
This part of the story is not strictly true, the Templar's were forced out of the Holy Land one castle at a time. All the Templar's castles were build on water sources but they did not have a ready source of food as they were for all intense and purpose in the dessert.
The Templar's did in the end head over to Cyprus to escape the Muslims but they did this after the fall of there last castle and not before as depicted in the movie.
The final battle at the end of the movie is factually correct in that it took place but there was no end of battle surrender as depicted in the movie.
Saladin had made it clear from the start that his fight was with the solderers and not the women and children.

I watched this last night lol well not all of it - got bored...
But i'd say not alot, ive never seen blood squirt like that...
