What is the best non-pop/rock movie soundtrack?!

I really do enjoy the "Hannibal" soundtrack by Hans Zimmer and I think the "28 Days Later" Soundrack by John Murphy is fantastic. Also "The Fifth Element" Soundtrack by Eric Serra.

Love "The Fifth Element". While it's not instrumental, I think the soundtrack to "The Sweet Hereafter" is pretty incredible.

Anything by John Williams or Howard Shore.

My two favorites are series and they are the Star Wars movies and all three Lord of the Rings.

Lord of the Rings soundtrack.

John Williams.

And Kill Bill Vol. 1 had a wicked soundtrack.

I also enjoyed the L.A. Confidential soundtrack - used a lot of 40's-50's music.

First off, when you say "best" are you referring to;
1.How the music informs and supports the film
2.Whether it is enjoyable to listen to outside of watching the film
3.How original and/or iconic is the score (original I assume and not an adaptation or reinterpretation ie. 2001 or The Sting)
Or is it all of these factors and more?

Certainly Jaws, Psycho & The Pink Panther establish the main musical themes as virtual characters in the film.

The Third Man, Touch of Evil and Taxi Driver are beautiful, original and and are integral to moving the narrative forward.

My favorite scores then that satisfy this criteria would be:

3. LOTR: Return of the King
4. The Illusionist
5. The Good, The Bad, & The Ugly
6. Miller's Crossing (yeah, I know Danny Boy is in it)
7. Lawrence of Arabia
8. Star Trek II: The Wrath of Khan
9. The Last Temptation of Christ
10. Dances With Wolves

nightmare before christmas was AWESOME... my music theory teacher had us listen to that in class --- just because it was an example of fine film music. both willy wonkas were good, but (you know me) i like the more recent one better.. darker is good!
everyone else has already said *star wars, and someone already mentioned LotR, but they are good too.
Pirates of the Carribean was pretty good too, along with Harry Potter.

*really enjoyed playing the sheet music from that soundtrack
