Marlon Brando?
I'm not sure he had played the greatest diversity, but Brando played :
A Japanese in "The Teahouse of the August Moon" (1956).
A Mexican in "Viva Zapata!" (1952) (Anthony Quinn was also in this movie, right?)
An Italian in "The Godfather" (1972)
A Polish in "A Streetcat Named Desire" (1951)
I think he played other races, but I don't know much about them...

Burt Reynolds did tons of different racial roles, when he did bit parts. Hard to argue with AQ

The late actor Frank Silvera.

well I agree A. Queen , but don't rule out Tyrone Power, he was an spanish bullfigther in Blod and Sand, a young aristocrat mexican figther in early California in the Mask of Zorro, a french dilplomat in SUEZ, as a british officer in India in the movie KING OF THE KHYBER RIFLES,

Believe it or not..but Eddie Murphy is fantastic at different races.
