I believe the white cap was there as to simulate a sort of countdown. Without the cap, the car would've exploded before he got into the store. The cap slowed down the fire traveling to the gas tank and igniting it.
the cap may have inadvertently acted like a timer, but my guess would be that the cap trapped the gas fumes in so the gas tank would explode. this would be a good thing for the people on that myth busters show to try.
