Because release dates are subject to change. Amazon.com is listing the estimated release date as well, and will even say so in the fine print at the bottom of the page.
Any number of things could push back release dates with very little notice. Sometimes it can be something that happens in the news close to the release date that makes publishers skittish on releasing something. 9/11 did that to a lot of movies and books. However, it can be something really silly as well.
