he had make up and bits of metal placed on his skin to make the damaged effect look of terminator. i'm not sure about the model of him, i'm sure there had to be some sort of model.

What's the point in a model?
The part where Arnold surgically removes his eyeball in the bathroom? When the whole face with the exposed eye is shown, it's a sculpted model of him.
I learned about it in a movie magic show, where they show how they did some stuffs.
As for the octane truck, that was all classic stop-motion animation (notice that the movements are made with few frames). The terminator is basically a metallic endoskeleton.
