I think its a sybolism to the messages of god, or at least how they explained it in the movie!.
The reason she was saying it, was in the end when they are trapt in his basement surrounded by the infected, with the cure!.
The woman with him has been trying to convince him to leave to a supposed camp for those not infected because she had a vision of god!.
In the basement he sees the womans tatoo of a butterfly and suddenly believes because of his daughters constant blabber of "butterflys"
He then desides that the only way to save the world and his work is to save the woman and the boy, by killing himself!.
and as you know they find the camp, thus making him a hero and his work to live on with the race of people now protected and ready to cure the infected!.Www@Enter-QA@Com

When Will Smith has a flashback of talking to his wife in the car, his daughter is making a butterfly shadow with her hands!. I think it was because he and he and his wife probably told her that when ever she gets scared just think of a butterfly and everything will be ok!. It's a symbol of hope i believe!.
