Because the infected are not zombies its a rage viruse!. It basicallly makes people so angry they kill or eat any one they find that are not like them!. so really it could happen because thier not coming back from the dead its a virus!.

I know what you mean - its not a "zombie", that they are actually living people just turned into mindless violent animals by the virus!.
The problem is though, no such virus that has any effects close to the rage virus exists in real life!.
There is also a huge plot hole of why the infected don't attack each other!. It is probably explained that somehow the virus can recognize another infected, which is impossible!.
Viruses have never shown to take control of the brain functions of higher organisms, and it is highly unlikely it ever will!.
The infected are depicted as using violence to spread the disease (through blood)!. This is obviously the virus' way of surviving, by multiplying its numbers!.
