here are few I know and find interesting!.
in the movie enemy of the state with will smith the birth date of the bad guy (who works for the gov by the way and spies on everyone) is
9-11 (they show is b day really quickly while gene hackmen is hacking into the gov system!.!.ironic isn't!?)
in the movie demolition man when snipes is deciding who to let out from their frozen state one of the criminals names was

The shark from Jaws was named "Bruce" after Steven Spielberg's lawyer!. The shark is now located in a junk yard!.
Saw was filmed in 18 days
Rosario Dawson had a small part in Devil's Rejects but that scene got cut!.
Blair Witch Project was filmed in 8 days!.
Real animals were killed in Cannibal Holcaust
Ruggero Deodato (director of Cannibal Holcaust) was arrested and charged with murder, after they found out the actors were still alive and the movie was fake the charges were dropped

The scene in Midnight Cowboy where Dustin Hoffman slams his hand on a cab hood and says, "I'm walkin' here!" was not rehearsed or in the script- apparently the cabbie somehow got through security and onto the set!. The rest was Hoffman's ingenuity!.
The scene in One, Two, Three in which James Cagney gives his long-winded instructions was done on the third take- the last take he was allowed before he was out of the movie, per Billy Wilder's instruction!.
Katherine Hepburn incurred a permanent eye infection from the water in the canals of Venice (she repeatedly fell backwards into the water for a particular scene) during the filming of Summertime!.
