you should check out robin trower (guitarist, procol harum) on tour. listen to Yes and their album Relayer.

Movin' On by Missouri,
Fly By Night by Chilliwack,
and Holding On To Yesterday by Ambrosia

I would say anything by Yes because they never really made it big Billboard wise. Their only hit was the really crappy song Owner of a Lonely Heart. They have so may cool songs that many haven't heard, like the album Tales From a Topographic Ocean.

Theres a cool kinda underground instrumental song from the 70's. Hocus Pocus by Focus, it has yodeling, and some flute playing. So like Jethro Tul, but really quirky, and fun to listen to.

Have you heard Blink of an Eye by Procol Harum, it was after 9/11.I can only find it on Youtube. Of course Whiter Shade of Pale was my favorite.

Speaking of Procul Harum, there's also "Conquistador" and "Homburg".

Fly By night! good song

i fought the law.... green day did a cover of it really good

Rock and Roll is a vicious game - April Wine
I like to rock - Thin Lizzy (my personal favorite that you never hear)
Rock Bottom - UFO
Dear Mr.Fantasy - Traffic

Rock Me To The Top - Tesla
So Into You - Atlanta Rhythm Section

check out
Head East - Never been any Reason

There are a ton of them out there and which ones you would like versus which ones I like would be very hard to predict.

If you are interested in learning more about this genre, get a Sirius Satellite Radio and listen to channel 14 - "Classic Vinyl;" and channel 16 - "The Vault." These channels play a lot of classic rock from the 1970s.
