What are your favorite kind of beans to eat?
Mine is pork & beans.
Answers:
I love to cook a large pot of dried Lima beans. We call them "butter beans" in my area.
It usually takes all day. I rinse them, then par-boil and let them soak. Then, change the water, bring to a boil, and let them simmer all day long. We call it "worry-ing the beans" because you need to keep checking them every so often. Add in some pulled-apart ham the last hour or two.
It is best with corn bread cooked in a cast iron skillet, or brownie pan. Even corn muffins are great with a hot dish of bean soup.
