Toasted both sides with some cheese grated on top. Not melted.
I put a thin coating of mayo on a slice of bread and put mayo side down in a hot skillet. Place a slice or two of cheese on it and add another slice of bread with mayo on the outside. Flip it over and toast that side. The perfect grilled cheese sandwich-don't do toasted cheese .

i butter both sides of the bread put the cheese in the center and put it in a pan and turn it until the cheese is totally melted and the darker the toast the better
