The best answer I've heard for this is that when St. Valentine was in jail he wrote letters to his friends on leaves he found growing near his cell window.

The leaves were shaped like a heart. St. Valentine's later association with love and lovers caused that shape to also be connected with love.

well i dont know which heart you're initially referring to but the ancients believe that the heart was the seat of emotions and that the kindeys were the innermost part of your being and therefore held your soul
however that is just figurately as you know because if you got a heart transplant you'd still love your significant other kids dog etc
actually all emotions are controlled by the brain...
