A bird in the hand is worth 2 in the bush means it's better to be satisfied with something you have than the chance of having something better (because you may not succeed in getting better).
Don't look a gift horse in the mouth means don't be ungrateful when you receive a gift. (good one to remember for Christmas!)
Don't make a mountain out of a mole hill means don't exaggerate the seriousness or importance of a problem.
One to add to the list is two birds with one stone.
