I'm the same as you I give it 5 stars. If it's not a 5 star answer why would I pick it right?

Depends upon the answer. Usually I get answers which I know and are actually not the "right" answers. In such a case choosing the "best" one deserves stars.

I believe you can't select a best answer without assigning stars. If I choose a best answer, I always give 5 *s! Otherwise it wouldn't be a best answer.
if someone takes the time to answer one of my questions I always give them 5 stars when I go to give them best answer....
