Why is it that my iTunes NEVER lets me change my album art?!

Question: Mostly, when I buy CDs, copy them into iTunes (like I did today with Maroon 5's new CD), it has NO picture and says Not Modifiable?

Go to, for example, amazon.com and find the album cover for your CD and save it on your PC. Then, just drag the image into the Album Art area in iTunes.
